Ingredients:

• 240g Cream cheese

• 40g Rice flour

• 4 egg yolks

• 4 egg whites

• 200ml pet milk

• 100g grated cheese

• 250g chicken tenderloin

• 150g pumpkin purée


Icing:


• 4tbsp of peanut butter

• 300ml greek yogurt

• 2 drops of food colouring

Instructions:

1. Preheat oven to 160°C.

2. Place a piece of parchment paper and cut for it to fit into the bottom of the cake pan. The best cake pan for this is a removable bottom one.

3. This step is crucial, do not skip it. Cover the outside of the cake pan with a piece of aluminum foil. You may want to fold the foil so it’s thicker.

4. Put the room-temperature cream cheese into a large mixing bowl and use a balloon whisk and whisk until partially soft.

5. Add 1 egg yolk and mix thoroughly, repeat adding all 4 eggs one at a time.

6. Sieve the rice flour into the bowl and combine the mixture mixing until no dry chunks of flour remain.

7. Add the pet milk little by little and make sure the pet milk is at room temperature before adding.

8. Add the pumpkin, chicken, and cheese into the mixture and mix thoroughly. Set aside.

9. In another bowl, lightly beat the egg whites with an electric mixer until medium peaks are formed. Make sure to avoid over-mixing as you are going to be mixing this mixture into the base.

10. Add a quarter of the egg white mixture at a time slowly and mix the mixture.

11. After all the egg whites have been mixed in, find another rectangular deep tray and fill it with hot water. No higher than halfway.

12. Bake in preheated oven for 10 minutes at 160°C then lower to 150C after 10 minutes. Bake for 40-50 minutes.

13. Put the cake into a cooling rack after and let it sit till cooled down. Remove from pan gently making sure not to damage the cake.


Icing:


1. In a medium bowl, put 4 tbsp of peanut butter and 300ml of yogurt and combine and mix. Depending on the consistency you may want to add more. If it’s too hard, you can add more yogurt, if it’s too soft, add more peanut butter.

2. Once you have the desired consistency, add 2 drops of the desired colour of choice to the icing.

3. Ready to top over the cake, make sure the cake is completely cool before icing it.

4. Add toppings of choice.

5. Cut and ready to serve.
