1. Honey pannacotta

INGREDIENTS:


• 1 cup coconut cream

• 2 tbsp Kōrure Pets Dog Honey

• 1/2 Gelatin Sachet

• Bubble wrap

• Edible flowers - Decorating 


INSTRUCTIONS:


1. Hydrate the gelatin. Follow the instructions on your gelatin if it’s either powder or gelatin sheets.

2. Set aside

3. In a saucepan add the coconut cream and dog honey, medium heat and whisk until starts to simmer, don’t let it boil.

4. Set aside and mix the gelatin in.

5. Pour the mixture into a mould and add the bubble wrap on top to give the honeycomb texture.

6. Let it set in the fridge for a minimum of 5 hours.


2. Spun Sugar 

INGREDIENTS:


• 1/2 cup granulated sugar

• 2 tablespoons water 


INSTRUCTIONS:


1. In a saucepan add sugar and water, very important to not stir or move.

2. Let it set at low/medium heat until it turns into an amber colour, which will indicate that the caramel is ready.

3. Set aside and let it cool down for around 20-30 seconds.

4. With a spoon, check the consistency of the caramel, when you see that the dripping starts to leave threads of caramel, it’s ready. You can use a spoon or a fork.

5. Use a glass or anything you have handy to give the ring shape.

6. Brush it with coconut oil, so the spun sugar is easy to remove.

7. Start shaping your spun sugar and before it becomes very hard, remove it from the mould and set it aside.

If you leave it at room temperature for a long time it will start melting, so it’s best to do it just before plating. 


3. Moss Cake 

INGREDIENTS:


• 1 Egg

• 3 Tablespoons of rice flour

• 1 Teaspoon baking powder

• 2 drops of food colouring - yellow


INSTRUCTIONS:


1. Whisk the egg until fluffy and add the drops of food colouring.

2. Mix the dry ingredients and add an egg.

3. Mix it and pour it into a disposable cup, filling it only 1/2 to give space for the mixture to rise.

4. Heat it for 50 sec in the microwave.


Plating 

Place the honey panna cotta and decorate it with edible flowers. Fill some of the honeycomb gaps with Dog honey. Add the yellow moss cake and some micro greens. Place your spun sugar creation and a wooden honey dipper and let your creativity do the rest.
