Ingredients:

Macaron


• 50g powdered egg shell

• 250g pumpkin seed flour

• 4 egg whites

• 1/2 teaspoon salt

• 1 teaspoon of coconut sugar

• 1 teaspoon spirulina powder (optional)


Filling


• 4 tablespoons cream cheese

• 2 tablespoons of cream

• 2 teaspoons gravy powder

(Can mix whatever fillings your dog likes, easy to customise)


Garnish


• Egg white

• Yoghurt drops

• Bee pollen

• Raspberry

• Liver

Instructions:

1. Combine the pumpkin seed flour, powdered egg shell and 1/2 teaspoon of salt in a bowl.

2. Using a stand mixer, beat the egg whites until soft peaks form. Gradually add the sugar and spirulina powder and continue to beat until stiff peaks form.

3. Fold the pumpkin seed flour mixture into the egg whites 1/3 at a time until fully combined. Transfer to a piping bag.

4. Pipe the ‘macarons’ onto a baking sheet lined with parchment paper in 3cm circles at least 2cm apart. Tap the sheet on a flat surface to release air bubbles.

5. Let the ‘macarons’ sit at room temperature for 30 minutes, until dry to the touch.

6. Preheat the oven to 150˚C. Bake the ‘macarons’ for 17 minutes and transfer to a wire rack to cool.

7. Beat the cream cheese, gravy powder and cream together in a bowl until incorporated and a buttercream-like consistency is reached. Transfer to a piping bag.

8. Garnish the top halves of the ‘macarons’ as desired.

9. Pipe the filling onto the bottom half of the ‘macaron’. Top with a garnished half to create a sandwich.

10. Plate as desired and give to your pup to enjoy.
